HOW TO ORDER POULTRY FROM M&M POULTRY

FREQUENCY:Weekly on Thursday / Friday

o Feet, giblets, splits, livers, wings, whole birds, mediums 1.7 , smalls 1.4

▪ Feet - low is 4-5k high is 12k, overseas order may change matters. Always

want aim to keep 8-10 trays (350g approx each) in freezer.

▪ Liver - Multi faceted as is giblets: Check Hong Kong order and stock, we are

not looking to build up stock - but put towards orders if left over. 8kg is low

and 15kg (yom tov) is high

▪ Giblets - 12kg is standard. Check freezer stocks - we don’t want more than

12 trays in freezer. Cut order back if freezer stock is too high. Also check

Hong Kong order

▪ Splits as required

▪ Wings - check what stocks of drumlettes are. 20kg in stock is about desired

hold. 30-40kg is approximate weekly usage. Majority of wings from Sydney

are used towards drumlettes stock. Unger requirements are also a

consideration

● Smalls and mediums from Sydney is an insurance on the inconsistency of

supply from Solomons. We train them to continue

▪ 1.4s (small) - Minimum order is 4 cartons of 10. Stock levels to be checked

for D’Lish. We want a minimum of 4 cartons in stock. We use smalls for this

▪ 1.7s (medium) - Minimum order is 4 cartons of 10. Stock levels to be

checked for D’Lish. We want a minimum of 20 trays of 6 in stock (3 birds per

tray). We use medium for this.

▪ Whole Birds - Tally weight of all above and take Whole Birds up to a pallet

weight of 950kg
